I have a habit for buying clearance merchandise. You know, those marked as Manager's Special that are great to be used immediately for that night's dinner, or frozen for use in a few days.
I happened upon the Al Fresco chicken apple sausage that was a great deal, and marked as gluten free and made in a pork-free casing. That's a big win in our household.
While looking for cabbage recipes for an upcoming dinner for the homeless shelter, I came across this recipe accidentally. And boy am I glad that I did! This may be the BEST thing I've ever eaten. And the best part is that I had all the remaining ingredients in the house, including the apple cider.
I did make one "tweek" to the recipe- I used sweet potatoes instead of white potatoes. That was mainly because this is what I had in the home, but in the end I think the sweet potatoes really tie in well with the apples in the sausage and the apple cider. Truly, my picture does not pay this beautiful dish justice. The bright colors of the sweet potatoes and the aroma of the cooked sausage are enough to make you want to come back for more...and more...and just a little bit more.
