Canyon Bakehouse Gluten Free Giveaway

It's a new year and how fitting that today is my 100th post AND I'm doing a giveaway. 



Canyon Bakehouse was nice enough to send me a box of their products to try & review. I had tried a few of their products before, like their hamburger buns, but I hadn't yet tried their focaccia or new Deli Rye Style bread.


Actually, the Deli Style Rye was the first thing that I tried. Straight from the bag it was nice and soft. 
My husband said he could immediately notice the distinct Caraway flavor. My dad enjoyed the sandwich that I made for him, pictured above. Of course, when one mentions Rye bread, thoughts of a Reuben sandwich immediately come to mind. Rejoice, as being GF no longer means living without this sandwich.
This bread only contains 70 calories and, like the rest of their sliced breads, has 2 grams of fiber and 2 grams of protein. Plus all their breads are made with regular ingredients that would find at your local grocery store and that you can pronounce!

My other big excitement was the focaccia bread. My friend has a local gluten free baking business and she makes the most awesome focaccia bread. While nothing beats the taste of local and fresh from the oven, this focaccia was good. I actually used it as a base for pizza. The added seasonings in the focaccia made for a flavorful and healthy pizza. Each serving has 3 grams of protein and 3 grams of fiber.  


I tried to get creative for Christmas with the Cinnamon Raisin bread. I planned to make a french toast bake with it. And then the power went out all over the state of Michigan. I did find an egg nog french toast crockpot recipe from the Dashing Dish to try, as my in-laws had a generator and heat on Christmas morning. I followed this crockpot recipe to the T, having some slight concerns that maybe I should have added more liquid, but went to bed after a long night. I was a tad "crispy" the next morning, but the salvageable parts weren't that bad. Therefore, I didn't take any pictures of my dish. If I were to make it again I wouldn't do it in the crockpot, but follow a recipe that allows you prep it the night before in a baking dish and stick it in the oven the next morning. 



Snow and cold is a recurring theme here in Michigan, and my husband and I currently have a snow day again, due to over a foot of snow and frigid wind chill temperatures. So I made another breakfast casserole, this time with the 7 grain bread. I used the following recipe, which I conveniently found in the box for my Pampered Chef Small Oval Baker box. I did make a few tweeks from the original, adding an extra piece of bread and more turkey ham. 




Egg Casserole for Two: 
3 eggs
3 tbsp. milk
3 slices Canyon Bakehouse 7 grain bread, cut into 1-inch cubes
1 green onion with top, thinly sliced
1/3 c. shredded cheddar cheese
1/3 c. chopped turkey ham

Preheat oven to 350 degrees. Oil/grease oval baker. In bowl, whisk eggs and milk, 
then mix in remaining ingredients. Bake 25 minutes or until egg mixture is set. 

My husband REALLY loved this. He asked me if there were ever times that I wanted to cry because of a dish I hadn't been able to eat in a long time due to my celiac. There have been times. My husband is allergic to pork, so I don't think he's had a breakfast casserole like this in a LONG time. He was SO happy. 

The fifth and last item that Canyon Bakehouse share with me is their hamburger buns. I've had these before, as the Aunt Millie's outlet in Lansing at one point carried them in their store. Fresh from the package they are super soft and are covered in little sesame seeds. It makes me think of restaurant style buns. We had leftover turkey from my family Christmas celebration, which we turned into barbecue sandwiches. It was DELICIOUS. Plus, each 200 calorie bun has 4 grams of fiber and 4 grams of protein.
