As a Celiac Disease Support Group chair and disease advocate, I get asked a lot of questions. One of the most common questions is "What can I eat? How should I cook?" I always encourage people to eat as much produce and lean meats as possible, include low-fat dairy (especially yogurt and kefir!) and to shop the periphery of the store. But sometimes we can be at a loss on how to put those items together.

Having a simple cookbook that's designed to be gluten-free is so helpful for those newly diagnosed. This is why I thoroughly enjoy Hope Comerford's cookbook,
The Gluten-Free Slow Cooker. Not only are the recipes super easy to follow, there designed to be made in a crockpot. I love meals that I can fix and not have to think about it again for a few hours. Her cookbook highlights recipes that are 5 ingredients or less, and she also highlights those that are dairy free.

I met Hope when she came as a vendor to our
Lansing Gluten Free Fair in 2015. Her cookbooks were definitely in demand. She sold out of every single book she brought, and her genuine demeanor was appreciated by those who had questions. After
many years of waiting to finally get a diagnosis for her gluten-related illness, she's someone who has been in the same place as so many who buy her cookbook.

Her cookbook has a plethora of recipes that you'll enjoy, including tips on which crockpot to buy and how best to use it. You'll find direction on how to make meals such as Peaches & Cream French Toast, Chickpea and Sweet Potato Curry Soup, Spinach and Artichoke Chicken, and Pizza Stuffed Spaghetti Squash, But wait, there's more! She also has a section on snacks that include an amazing recipe for Buffalo Chicken Meatballs. There are also dessert recipes like the Pumpkin Brownies with Cream Cheese Frosting, pictured above.
